Wines made once, with guest growers (ONE-OFF) and released in a numbered lot every spring & fall. Each one bottled once [NEVER RESTOCKED] and gone for good.

Assay is a concept winery built on trials. We hand each guest grower one question and bottle the answer. Numbered, small and sealed by hand.
